APRICOT COUSCOUS WITH PRESERVED LEMONS

Ingredients

  • 2 cups water
  • 1/4 cup diced dried apricots
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp minced preserved lemons peel only rinsed
  • 1 pinch of salt
  • 1 cup instant couscous

Instructions

  • Heat water, apricots, honey, oil, preserved lemons, and salt in a saucepan to a boil over medium-high.
  • Stir in couscous, remove from heat, cover pan, and let stand for 5 minutes. Fluff couscous with a fork before serving.
