Hi, I’m Carla. WELCOME TO MY BLOG. Through my writing and photography, I plan to take you along on my culinary and travel adventures. My sincerest hope is to bring you authentic recipes from great cuisines and cultures around the world.
But first, allow me to introduce myself. I’m half Brazilian, half Italian. I’ve been a resident of the United States for 19 years and prior to living in the US, I lived in The Netherlands where I studied cosmetology and language and exposed myself to some wonderful international cuisine. I am now fluent in four languages. As it turns out, this fluency has provided me with a wonderful foundation to communicate with people, particularly chefs around the world. After studying in The Nederlands, I moved to New York City where I lived in Tribeca, the heart of New York’s food scene.
In New York, I developed a real passion for cooking and started taking cooking classes at the Institute of Culinary Education. I took classes on a variety of cuisines including Italian, Asian and Mediterranean. As my culinary skills developed, I realized that I was interested in pursuing a career in food. Cooking is something that just comes naturally to me. I love to learn recipes and techniques and then find a way to make them my own. As time went on, I grew more curious about exploring other cuisines. It was then that I started to travel abroad to attend culinary schools. Upon returning from my trips, my family and friends were eager to hear about my adventures, and excited to taste the new dishes that I had learned. I started this blog to share those adventures with a broader audience.
I like to prepare my meals from scratch using healthy local ingredients and fresh seasonal produce. In this way, I am a lot like my mother who walked to the market most days to bring home the food that she cooked for our family. I truly believe that food made from local, healthy ingredients not only tastes better, but is better for you. I don’t believe in culinary deprivation. I strongly believe in balance and moderation. I allow myself treats on weekends, and ‘cheating’ days. I read labels and I tend to avoid butter and processed ingredients at all costs. If there is one thing I have learned over the years, it’s that good cooking does not require a lot of butter in order to taste good. You can achieve the same results by just using good quality olive oil, fresh herbs and spices.
In my search for great cuisine, I read many books and visited cooking websites only to find that the recipes were incomplete or incorrect. I decided that my blog would be different. My promise to you is that all the recipes featured in this blog have been thoroughly tested. If you make any of my recipes, you will end up with great results (and probably many compliments).
The name, “My Global Cuisine”, was chosen in order to reflect my exposure to different cultures and cuisines, and training with international chefs. This training has broadened my palate and introduced me to a wide variety of cooking styles and flavors from all over the world. For me, each country has their own food heritage, and I am eager to explore this heritage and bring it to my readers in these pages.
I currently split my time between the US and Italy. I live in a medieval Italian village in the Campania region in a home with a beautiful view to the mountains. As a chef, I really appreciate the abundance of harvest products widely available in this region. It makes cooking even more delightful.
In my spare time, I enjoy spending time with my friends and family, visiting art museums and taking my puppy Luna out for walks.

Buongiorno Carla. Thank you so much for sharing your amazing recipe for Mussels al Sambuca. I made this dish this evening and they are the best mussels I have ever tasted. I try mussels at most restaurants that serve them, because they are a healthy option on the menu, so I know what good ones taste like. My husband has never been a big fan of mussels, but he ate these tonight and now he has asked me to make them for him once a week. We both absolutely loved them. This will now become one of the recipes I make over and over again for great friends and family. Thank you !
